One of our favorite items to always get while at the sushi bar is Hamachi, or Yellowtail. It's also known as Japanese Amberjack, though we think that name's too long and that's why we don't usually use it. We always try to include a little bit of the bloodline in our Yellowtail so you can always tell it's the real thing. It also makes it tastier.
